Mealz with Meelz - Sweet Potato Gnocchi - One Pot

Sometimes I will cook a homemade sauce and meatballs and some days Amelia is eating chicken fingers and mac&cheese for breakfast. I’ve come to accept that every meal cannot be perfect, especially as a working mom and sometimes we just need what is fastest. So here I am, sharing a quick, easy and sorta okay for you meal that takes only 15 minutes. I swear by so many things at Trader Joe's, especially the frozen meals when you are in a rush. This quick meal, I can't even call it a recipe, (because the food is all cooked ready) only calls for four items:


  • Trader Joe's Sweet Potato Gnocchi

  • Chicken Sausage

  • Frozen broccoli

  • OliveOil



For the protein and the veggies, you can honestly chose whatever you want but these are just what I went for this time. Trader Joe's also has so many other options of frozen pasta that you can do this with, like raviolis, cauliflower gnocchi, Alfredo etc. If anyone ever wants to go to Trader Joe's, just call me. Food shopping is Amelia's favorite thing to do, people in supermarkets love babies with big bows and she loves the attention.


I used the magic chef pot for this, which I absolutely swear by for cooking and ease of cleaning. As far as directions, on how to do this, heat up the olive oil in the pan, chop up your chicken sausages and get them heated up (or cooked if they aren’t already cooked) and then throw in the frozen broccoli and pasta. Heat until desired temperature or just turn the package around for better directions.




All you have left to do now is serve, and pray that your child is interested in the meal you cooked because that's a gamble in itself. Also, if anyone is ever looking for the best bib, this is the one.
